The new “cantina”, finished in May 2003, represents the innovation the company exercises, while respecting traditions and maintaining historical continuity. The structure is notable for its impressive brick tower, and is on three floors. The cellar, completely underground, is made up of three areas, one for the fermentation, one for the barrels, and one for storing the bottles. The ground floor is reserved for the bottling and labelling, but also for wine-tastings, thanks to a beautiful room with views over the vineyards. In between the two floors there is an elevator that brings the wine straight from the barrels, thus avoiding the need for the wine to be pumped vertically. On the first floor, you can see the ritual of the drying-out of the Sagrantino grapes, necessary for the classic Sagrantino Passito. |
